He or she can convert to any religion, but he or she will always be Jewish"? I sit and ask myself "WHAT"???? In the eyes of whom? If the man doesn't want to be considered as jewish and he converted to other religion this means HE IS NOT JEWISH anymore in terms of his religion. You can not change your ethnic origins but Thank God you can switch the religion.
