it is no fault of yours not to have the tradition, but you ought not make errant generalizations. The middle eastern cuisine is as arab as iti is Jewish, As for the American diaspora and the Israeli hard core ashkenazim, generations upon generations had this uniquely kosher pallete of foods, which by now is "in the blood". For the pre fast meal we made Bialys, a distinctly Polish Jewish comfort food, and in times past, for some, the only food.
