Ingredients for 10-12 small pizzas:
500 grams of puff pastry1 tablespoon of olive oil
200 ml. of smooth tomato sauce
1 clove of garlic, crushed
1/2 teaspoon of chopped oregano
4 basil leaves
1 egg
1 tablespoon of grated parmesan cheese
A handful of green and black olives
5 portobello mushrooms, lightly seared in the pan
100 grams of grated mozzarella cheese
Preparation:
For the pizza sauce: Heat the oil in a small pot and add garlic and oregano. Cook for 1/2 a minute. Add the tomato sauce and bring to a boil. Add the basil. Season with salt and sugar.
For the cups: Roll out the dough and cut out 4 circles that are 9 cm in diameter (to be used for the base of the pastry).
Cut 8 additional circles, also 9 cm in diameter, and then cut out a smaller circle in the center of the first one, 6 cm in diameter.
Place the 4 unmarked circles on the baking dish and perforate them with a fork.
Place 2 of the rings created by the cut-out 6 cm circles on each base.
Bake the "cups" in an oven preheated to 170 degrees Celsius (about 340 degrees Fahrenheit) for 30 minutes, until golden, puffy cups are created.
Remove the cups from the oven and fill one with pizza sauce, mozzarella, and green olives; fill a second cup with pizza sauce, mozzarella, and black olives; fill a third cup with egg and parmesan by breaking the egg inside the cup and sprinkling parmesan on top; fill the fourth with the seared mushrooms, mozzarella and parmesan.
Place back into the oven and bake for 5 minutes, or until the cheese becomes golden in color.
