I was at a Libyan Shiva a while ago, and I was given some hraymi - I absolutely thought I was going to DIE!!! It was so hot! The only that is better in the Ashkenazi kitchen is the fish dishes. Everything else, Sephardim win, hands down – including their men – oooohhh yummy!

1. Real gefilte fish is made with carp, not with bland, tasteless white fish or pike as done in Amerika. 2. There is a confusion among people, especially in Israel, about what gefite really is: Gefilte fish was originally stuffed fish, not the "quenelles" or fish balls we mostly make today. This worthless recipe is similar to fish patties but "real" classic gefilte fish is made from ground-up fish paste with the chopped and ground mixture stuffed back into the skin (“gefilte”) of a whole carp, poached, refrgerated and then sliced, served at room temperature, with skin and bones... 3. Go easy on the sugar, be generous with the black pepper, do not forget plenty of carrots and onions or leeks and you should preferably serve this delicacy with home-made horseradish (ashkenazi wasabi). Enjoy!

Where can one find white fish and pike in Israel ? Karp is too fatty so what is a good substitute ? Any advice appreciated.
