Supermarkets should be allowed to operate daily. Shabbat is about people respecting the holy day. If the workers were to observe Shabbat on their day of rest (which would be other weekdays) that is conducted and organised by different rabbi for the different weekdays then Shabbat would not loose it's religious meaning. The only concept that is changed is the different days of rest for supermarket workers Shabbat would then still be respected.
