Like grandma used to make: a marble cake with a modern twist

The classic dessert, now upgraded to offer the same delicious taste in a healthier version

Ingredients:
  • 3 large eggs
  • 3/4 cup (150g) cane sugar
  • 1/3 cup (60g) olive oil
  • 1/2 cup (120g) orange juice
  • A pinch of salt
  • 1 cup (140g) whole spelt flour
  • 1 packet (10g) baking powder
  • 1/4 cup (25g) ground coconut

Instructions:
  1. Preheat the oven to 356°F (180°C) on the turbo setting.
  2. In a large bowl, whisk together the eggs, sugar, oil, and orange juice until smooth.
  3. Add the salt, flour, baking powder, and coconut, mixing just until combined, with minimal stirring.
  4. Transfer 1/3 of the cake batter to a separate bowl. Add the orange juice and cocoa powder, mixing until combined.
  5. Pour the white batter into a baking tin. Add the chocolate mixture on top. Using a fork or knife, swirl in circular motions from bottom to top to create a marbled effect (resist the temptation to overmix!).
  6. Bake for 35–45 minutes or until a skewer inserted into the center comes out with only moist crumbs.
