Ingredients (approx. 30 pancakes):
- 5 potatoes, peeled
- 1 onion, peeled
- 1/2 cup flour
- 2 eggs
- Salt
- Pepper
- Canola oil for shallow frying

Preparation:
- Grate the potatoes and onion using a coarse grater into a large bowl. Squeeze out the excess liquid from the potatoes and onion.
- Add the flour to the mixture and stir.
- Add the eggs and mix well.
- Season with salt and pepper, and mix until you have a uniform batter.
- Heat oil in a frying pan. Once the oil is hot, use two spoons to form the batter into fritters and fry for about two minutes on each side over medium heat. Serve immediately.
