Classic potato fritters: A snack like no other

Ingredients (approx. 30 pancakes):
  • 5 potatoes, peeled
  • 1 onion, peeled
  • 1/2 cup flour
  • 2 eggs
  • Salt
  • Pepper
  • Canola oil for shallow frying

Preparation:
  1. Grate the potatoes and onion using a coarse grater into a large bowl. Squeeze out the excess liquid from the potatoes and onion.
  2. Add the flour to the mixture and stir.
  3. Add the eggs and mix well.
  4. Season with salt and pepper, and mix until you have a uniform batter.
  5. Heat oil in a frying pan. Once the oil is hot, use two spoons to form the batter into fritters and fry for about two minutes on each side over medium heat. Serve immediately.
