Ingredients:
- 2 eggs
- 1/2 cup oil
- 3/4 cup sugar
- 1/2 cup milk or coconut cream or milk substitute or orange juice
- 1/2 cup ground almonds
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1/4 tsp ground cinnamon
- 1/8 tbs nutmeg
- 1/8 tbs. ground dry ginger
- 1 cup flour
- 1/2 cup orange marmalade for filling

Instructions:
- Heat oven to 180° C (356° F). Oil muffin pan or line then with baking sheet
- Break eggs into a bowl and mix well, add oil, sugar, milk and beat until smooth. Add almonds, baking powder cinnamon, nutmeg and salt. Then add the flower and fold. Mix well.
- Place the mixture in the muffin cups so that they are 2/3 full and top them add a table spoon of marmalade and cover with more of the mixture.
- Bake for 25 minutes, cool and serve.
