Ingredients (serves 6):
- 2.2 pounds salmon fillet, skin on
- Salt and pepper
- 1/4 cup brown sugar
- 1/4 cup grainy mustard
Optional upgrades:
- 1 garlic clove, crushed
- Grated zest of 1/2 lemon
- For striking color, add 1/4 beet, grated
For serving:
- Fresh herbs or microgreens
Instructions:
- Heat oven to 400 F.
- Line a baking sheet with aluminum foil and place the fish on it, skin side down. Season well with salt and pepper.
- Mix the sauce. Add the garlic, lemon zest and grated beet, if using. Spread over the top of the fish so it is fully coated.
- Bake for 13 minutes. Serve immediately, or keep covered on a warming plate at the lowest heat.
