Easy salmon fillet that still feels festive

A quick, impressive salmon dish gets a sweet-sharp glaze of brown sugar and grainy mustard, with optional garlic, lemon zest and grated beet for extra color

Ingredients (serves 6):

  • 2.2 pounds salmon fillet, skin on
  • Salt and pepper
  • 1/4 cup brown sugar
  • 1/4 cup grainy mustard
Optional upgrades:
  • 1 garlic clove, crushed
  • Grated zest of 1/2 lemon
  • For striking color, add 1/4 beet, grated
For serving:
  • Fresh herbs or microgreens

Instructions:

  1. Heat oven to 400 F.
  2. Line a baking sheet with aluminum foil and place the fish on it, skin side down. Season well with salt and pepper.
  3. Mix the sauce. Add the garlic, lemon zest and grated beet, if using. Spread over the top of the fish so it is fully coated.
  4. Bake for 13 minutes. Serve immediately, or keep covered on a warming plate at the lowest heat.
