Ingredients (serves 5):
- 80g softened butter (not melted)
- 5 heaping tbsp dark brown sugar
- 1 egg
- 2 tsp instant coffee powder
- ¾ cup all-purpose flour
- 1 tsp baking powder
- ¾ cup ground walnuts
- 60g chopped walnuts
Instructions:
- Preheat oven to 170°C (340°F). Line a baking tray with parchment paper.
- In a medium bowl, mix butter and sugar with a spoon until smooth. Add the egg and coffee, stir until uniform.
- Add flour, baking powder and ground walnuts. Mix to form a smooth dough. Chill in the fridge for 5 minutes.
- Place chopped walnuts in a small bowl. Roll dough into hazelnut-sized balls, coat in chopped walnuts, and place on tray with 1 cm spacing.
- Bake for 10–12 minutes, until cookies are golden at the edges. Cool completely before removing from tray.
