Coffee walnut cookies that melt in your mouth

Buttery, nutty and lightly caffeinated, these coffee walnut cookies come together in minutes and bake to golden perfection; ideal for cozy afternoons or as a crowd-pleasing treat

Ingredients (serves 5):
  • 80g softened butter (not melted)
  • 5 heaping tbsp dark brown sugar
  • 1 egg
  • 2 tsp instant coffee powder
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¾ cup ground walnuts
  • 60g chopped walnuts

Instructions:
  1. Preheat oven to 170°C (340°F). Line a baking tray with parchment paper.
  2. In a medium bowl, mix butter and sugar with a spoon until smooth. Add the egg and coffee, stir until uniform.
  3. Add flour, baking powder and ground walnuts. Mix to form a smooth dough. Chill in the fridge for 5 minutes.
  4. Place chopped walnuts in a small bowl. Roll dough into hazelnut-sized balls, coat in chopped walnuts, and place on tray with 1 cm spacing.
  5. Bake for 10–12 minutes, until cookies are golden at the edges. Cool completely before removing from tray.
