Tip: Want to make it a main dish? Add ½ lb (250 g) sautéed ground chicken with olive oil and spices to the filling.
Ingredients (8 rolls, about 16 servings)
For wrapping:
- Leaves from 1 head of butter lettuce or romaine
- 8 rice paper sheets
For the charoset filling
- 6 Medjool dates, pitted
- ½ cup golden raisins
- ½ cup dark raisins
- 2 heaping tbsp ground almonds
- ½ cup slivered blanched almonds
- ½ cup chopped walnuts
- 1–2 tbsp almond butter
- ½ tsp grated lemon or orange zest
- 1 cm fresh ginger root, finely chopped
- Pinch of salt
For the dipping sauce:
- 2 tbsp peanut butter
- 1 tbsp silan (date syrup) or honey
- 2 tbsp grape juice or water
- 2 tbsp water
- 1 tbsp lemon juice
- 1 tsp finely chopped ginger

Instructions:
- Make the filling: Finely chop dates and raisins with a knife. Add remaining ingredients and mix well. Store in the refrigerator for up to 4 days.
- Prepare for rolling: Dampen and wring out two clean kitchen towels. Lay one on your work surface and set the other on a plate or tray to cover the finished rolls. Fill a wide, shallow bowl with lukewarm water (about 1.5 inches deep). Remove filling from fridge.
- Assemble the rolls: Dip a rice paper sheet in the water for 8–10 seconds until just pliable (it will continue to soften as you roll). Let excess water drip off, then lay the sheet flat on the towel. Place a lettuce leaf on top (trim or use just the soft part as needed). Add about 2 tablespoons of filling near the bottom edge of the lettuce, about 1 inch from the edge. Roll up like a cigar: one roll from bottom up, fold in the sides, then continue rolling tightly. Place the finished roll on the tray and cover with the damp towel. Repeat for the remaining rolls, leaving slight space between each so they don’t stick. Rolls can be prepped up to 5 hours in advance and stored in the fridge.
- Make the sauce: Whisk or shake all sauce ingredients in a bowl or jar until smooth. Store refrigerated for up to 3 days.
- To serve: Slice each roll in half and serve with the dipping sauce on the side.
