A perfect date cookie that melts in your mouth

For the dough:
  • 200 grams coconut oil
  • 1 cup sunflower oil
  • 1 cup water
  • 750 grams flour
  • 2 bags baking powder
  • 2 bags vanilla sugar
  • A pinch of salt

For the filling:
  • 2 tbs. date spread
  • 1/2 tsp. clove
  • 1 tsp ground cinnamon
  • 1/4 tsp. ginger
  • 2 tbs. sunflower oil

Instructions:
  1. Mix dry ingredients in bowl and the wet ingredients in a separate bowl. Then mix together to make a dough. Roll into a string and cut into six. Make each part into balls.
  2. For the filling mix all ingredients and stir well add the oil last.
  3. Roll the filling into balls
  4. Heat the over to 180° C (356° F)
  5. Oil your hands a bit, open each ball of dough and put the filling on top and roll back creating a string again. Then make halfmoons.
  6. Bake for 15 to 20 minutes and let cool
  7. Sprinkle the vanilla sugar on top and serve
