Ingredients
For the dough:
500 grams of flour
180 ml of milk
10 grams of dry yeast
1 cup of cottage cheese or white cheese
2 tablespoons of sugar or maple
3 tablespoons of olive oil
1 teaspoon of salt
For decoration:
1 egg yolk or whole beaten egg
1 teaspoon of water
A pinch of salt
Preparations:
1. In a mixer bowl with a dough hook, place all the ingredients except the salt and mix on slow speed for 5 minutes. Add the salt and knead at a greater speed for another 10 minutes.
2. Cover the bowl and let it settle for 45 minutes.
3. Cut the dough into 10 pieces of equal pieces and flatten each piece of dough into a kind of pita shape. Roll into a tight roll and place on a baking sheet. Let the strips rest on the counter, covered, for 15 minutes.
4. Extend each strip to about 20 cm and tie it into a regular knot. Place on a baking sheet lined with baking paper.
5. Cover the rolls with a towel and let them rise until they have almost doubled in size.

6. In a small bowl, whisk the egg yolk with water and salt and brush the rolls. Sprinkle sesame seeds generously.
7. Bake in a preheated oven at 180 degrees for 15-20 minutes or until golden brown.
