Ingredients:
- 2 nectarines
- 1 zucchini
- 2 cucumbers
- 3 apricots
- A handful of arugula leaves
- 10 chives
- 1 lemon
- 3 tablespoons olive oil
- A pinch of salt
- Feta cheese, to taste

Instructions:
- Slice the nectarines into medium-thick wedges. Cut the zucchini into large chunks.
- Sear both on a hot, dry skillet (no oil) until slightly charred. Transfer to a tray and let cool.
- Halve the cucumbers lengthwise and slice them on the diagonal into thick pieces. Quarter the apricots. Roughly chop the arugula and finely chop the chives.
- In a large bowl, squeeze the lemon juice and add olive oil, a pinch of salt and the chopped chives. Mix well.
- Add the apricots, cucumbers, zucchini, nectarines and arugula to the bowl. Mix gently by hand to combine. Transfer the salad to a serving bowl. Crumble the feta cheese over the top with your hands and sprinkle generously. Serve immediately.
