Ingredients (serves 6):

  • English cake pan
  • 3 eggs
  • 1¼ cups (250 g) sugar
  • ½ cup (120 ml) canola oil
  • 1 cup (240 ml) orange juice
  • 1¾ cups (245 g) self-rising flour
  • ½ cup (45 g) ground almonds
  • 1 tbsp grated orange zest
  • For serving: ½ cup orange juice, powdered sugar

Instructions:

  1. Preheat oven to 170°C (340°F) and grease the pan.
  2. Beat the eggs with 1¼ cups sugar until light and fluffy. Gradually add oil and orange juice, and beat for 3 more minutes.
  3. Gently fold in self-rising flour, ground almonds and orange zest.
  4. Pour into the pan and bake for about 30 minutes, until a toothpick comes out with moist crumbs.
