Ingredients (serves 6):
- English cake pan
- 3 eggs
- 1¼ cups (250 g) sugar
- ½ cup (120 ml) canola oil
- 1 cup (240 ml) orange juice
- 1¾ cups (245 g) self-rising flour
- ½ cup (45 g) ground almonds
- 1 tbsp grated orange zest
- For serving: ½ cup orange juice, powdered sugar
Instructions:
- Preheat oven to 170°C (340°F) and grease the pan.
- Beat the eggs with 1¼ cups sugar until light and fluffy. Gradually add oil and orange juice, and beat for 3 more minutes.
- Gently fold in self-rising flour, ground almonds and orange zest.
- Pour into the pan and bake for about 30 minutes, until a toothpick comes out with moist crumbs.
