Bamba-flavored ice cream cake

Ingredients
For the ice cream:
  • 1 container vanilla ice cream, 1.33 liters
  • 1 bag, 30 grams, red peanut snack
  • 4-5 peanut snacks, such as Bamba, crumbled
For the base
  • 100 grams butter, at room temperature
  • 150 grams biscuits
  • 50 grams peanut snack
  • 2 tablespoons powdered sugar
Preparation
  1. Remove the ice cream from the freezer 20-30 minutes in advance to soften. Soften the butter for the base as well.
  2. Prepare the base: Place the butter, biscuits, peanut snack and powdered sugar in the bowl of a food processor and process until smooth. Line a 25x25 cm pan with plastic wrap, leaving extra wrap hanging over the sides. Transfer the mixture to the pan, spread it evenly and press it firmly into the bottom.
  3. Prepare the ice cream layer: Spoon generous scoops of the softened ice cream over the base. Place pieces of the red peanut snack between the scoops of ice cream, keeping a few aside to scatter over the top. Use the back of a spoon to smooth the surface. Scatter the reserved red peanut snacks over the ice cream and crumble the Bamba-style peanut snacks on top.
  4. Cover with plastic wrap and freeze for at least 6 hours. Serve frozen.
Storage: Keeps for up to 3 months in the freezer.
