So why else should you make them? Because it’s a classic recipe everyone loves. And it’s especially fitting for these days, when we want to prepare something that reminds us of mom’s kitchen as Yom Kippur approaches.

The dough is easy to make in a mixer, adding the ingredients one by one. Once ready, chill it in the fridge. Divide it in two — it will be easier to work with.
The date filling is made in a food processor. I added a spoon or two of boiling water to soften it — don’t hesitate to add another spoon if needed.
I divided the dough into two parts to make it easier to handle. You can prepare one batch with dates and another with chocolate, of course.
Ingredients
- 2 ½ cups white spelt flour
- 50 g ground almonds
- 3 tbsp powdered sugar
- 1 packet baking powder
- 150 g soft butter (cubed)
- ⅓ cup oil
- ½ cup orange juice
- 100 g ground walnuts
- Date paste (for filling)
- 1 tsp cinnamon
- A little butter (to blend with the dates)
- Boiling water, as needed
Instructions
- In a mixer bowl, combine the flour, ground almonds, powdered sugar, and baking powder. Mix together.
- Add the soft butter cubes and mix until crumbly.
- Add the oil and mix again.
- Pour in the orange juice and continue mixing until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for 1 hour.
- Meanwhile, prepare the filling: in a food processor, blend the dates with butter and cinnamon, adding a little boiling water at a time until the mixture is smooth and soft.
- Remove the dough from the fridge and divide it into two parts.
- Roll out each part between two sheets of parchment paper. Spread a layer of date filling over the dough and sprinkle with ground walnuts.
- Roll into a long log (like a roulade). Score shallow lines across the top.
- Place on a baking tray and bake in a preheated oven at 170°C (340°F) for about 20 minutes, until golden and set.
- Remove from oven, slice into pieces, dust with powdered sugar, and enjoy every bite.
