Ingredients (serves 4):
- 1 package of fettuccine pasta
- 6 tablespoons olive oil
- 2 garlic cloves, thinly sliced
- ½ teaspoon crushed red chili flakes
- 1 tablespoon grated lemon zest
- Salt
- Freshly ground black pepper
- 20 grams (0.7 oz) butter (optional)
- ½ cup grated Parmesan cheese
- ½ cup coarsely chopped parsley
- Juice from 2 lemons

Instructions:
1. Cook the pasta according to the package instructions. Drain and reserve 1 cup of the cooking water.
2. In a large skillet, heat olive oil over low heat. Add the garlic and chili flakes and sauté for about 3 minutes. Add the reserved pasta water, lemon juice, lemon zest, butter, parsley, salt and black pepper. Cook over high heat for 3 minutes.
3. Add the pasta and toss well to coat. Remove from the heat, sprinkle generously with Parmesan cheese and serve immediately.
