Ingredients:
- 2 medium-sized sweet potatoes cut into small cubes
- 2 tsp. olive oil
- 1 apricot cut into small cubes (best pealed)
- 10 yellow dates cut into quarters
- Seeds from one pomegranate
- 1 tsp fresh thyme
- 2 tbs. chopped mint
For dressing
- 1 tbs. mustard
- Garlic
- 4 tbs. olive oil
- 2 tbs. vinegar
- 1/4 cup orange juice
- 1 tbs. brown sugar
Instructions:
- Heat oven to 170° C (338° F)
- Put sweet potato cubes on a pan with a baking sheet, pour olive oil and bake for 25 minutes until soft and golden. Then cool
- Add to a bowl with the rest of the ingredients
- Pour dressing and mix well
