Sweat potato salad for autumn days

You can prepare it in advance, and it will keep for a couple of days in the fridge—if you can resist eating it first!

Ingredients:
  • 2 medium-sized sweet potatoes cut into small cubes
  • 2 tsp. olive oil
  • 1 apricot cut into small cubes (best pealed)
  • 10 yellow dates cut into quarters
  • Seeds from one pomegranate
  • 1 tsp fresh thyme
  • 2 tbs. chopped mint

For dressing
  • 1 tbs. mustard
  • Garlic
  • 4 tbs. olive oil
  • 2 tbs. vinegar
  • 1/4 cup orange juice
  • 1 tbs. brown sugar
Instructions:
  1. Heat oven to 170° C (338° F)
  2. Put sweet potato cubes on a pan with a baking sheet, pour olive oil and bake for 25 minutes until soft and golden. Then cool
  3. Add to a bowl with the rest of the ingredients
  4. Pour dressing and mix well
