Ingredients (serves 8):
- Use a 10-inch (26 cm) round baking dish or a medium rectangular pan.
- 3 medium potatoes, boiled and peeled
- 2 egg yolks
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- 1 onion, peeled and finely chopped
- 3 garlic cloves, crushed
- 1 lb (½ kg) ground beef
- 4 tbsp tomato paste
- 1 cup tomato purée (about 8 oz)
- 1 cup canned peas, drained
Instructions:
- Preheat oven to 350°F (180°C) and grease the baking dish well.
- Mash the potatoes until smooth. Add egg yolks, season with salt and pepper, and mix until fully combined.
- Heat olive oil in a skillet and sauté the onion until golden. Add garlic, stir, and cook for another minute.
- Add the ground beef, stir, and cook for about 5 minutes, until browned. Mix in the tomato paste and purée, cook for another 5 minutes, and season with salt and pepper. Stir in the peas gently.
- Spread the meat mixture evenly in the baking dish. Top with the mashed potatoes, smoothing and pressing it down. Use a fork to create decorative lines on top.
- Bake for about 30 minutes, until the potato layer is golden brown.
