Ingredients (serves 4):
- ½ head white cabbage
- 15 dried apricots
- ½ cup sliced almonds
- ½ bunch chives
For the dressing:
- 3 tablespoons oil
- ½ teaspoon salt
- Juice of ½ lemon
- 2 tablespoons maple syrup

Cabbage, apricot and almond salad with maple-lemon dressing

Instructions:
- Toast the almonds in a hot skillet until lightly golden.
- Slice the cabbage into the thinnest strips possible.
- Dice the apricots and thinly slice the chives.
- In a cup, mix together all the dressing ingredients.
- Combine the cabbage, apricots, almonds and chives in a bowl. Add the dressing, toss well and serve.
