Cabbage gets a glow-up in this sweet-tangy salad

A light and flavorful salad of shredded cabbage, dried apricots, toasted almonds and fresh chives, tossed in a tangy-sweet maple vinaigrette; perfect for a refreshing side dish or a light meal

Ingredients (serves 4):

  • ½ head white cabbage
  • 15 dried apricots
  • ½ cup sliced almonds
  • ½ bunch chives
For the dressing:
  • 3 tablespoons oil
  • ½ teaspoon salt
  • Juice of ½ lemon
  • 2 tablespoons maple syrup

Instructions:

  • Toast the almonds in a hot skillet until lightly golden.
  • Slice the cabbage into the thinnest strips possible.
  • Dice the apricots and thinly slice the chives.
  • In a cup, mix together all the dressing ingredients.
  • Combine the cabbage, apricots, almonds and chives in a bowl. Add the dressing, toss well and serve.
