Ingredients (1 serving):
  • 1 medium potato (preferably red)
  • 1 tsp Dijon mustard
  • ½ tsp sweet paprika
  • ¼ tsp ground cumin
  • (Optional: 1–2 cloves garlic, crushed or fresh rosemary leaves. You can also swap hot paprika for sweet.)

Oven-baked potato
Instructions:
  1. Cook the potato in boiling water until tender, then peel. Cut into quarters and let cool (can be done a day ahead).
  2. In a bowl, mix the mustard with the spices. Add the potato pieces and gently toss until fully coated.
  3. Bake under the oven grill for about 15 minutes, until browned and crispy.
  4. Alternatively, skip the pre-cooking: bake the whole potato at medium heat for about 45 minutes until done.
  5. Serve hot, with your choice of extra seasoning.
