Ingredients (1 serving):
- 1 medium potato (preferably red)
- 1 tsp Dijon mustard
- ½ tsp sweet paprika
- ¼ tsp ground cumin
- (Optional: 1–2 cloves garlic, crushed or fresh rosemary leaves. You can also swap hot paprika for sweet.)
Instructions:
- Cook the potato in boiling water until tender, then peel. Cut into quarters and let cool (can be done a day ahead).
- In a bowl, mix the mustard with the spices. Add the potato pieces and gently toss until fully coated.
- Bake under the oven grill for about 15 minutes, until browned and crispy.
- Alternatively, skip the pre-cooking: bake the whole potato at medium heat for about 45 minutes until done.
- Serve hot, with your choice of extra seasoning.
